  • 1 tsp vanilla extract Enhances flavor.
  • 1 tbsp chia seeds (optional) Adds extra fiber.
  • 1-2 tbsp water (if needed) Helps to reach desired consistency.

Preparation

  • In a spacious bowl, combine the rolled oats, finely chopped almonds, freeze-dried raspberries, shredded coconut, and chia seeds if using.
  • Add the creamy almond butter, honey or maple syrup, and vanilla extract to the bowl, mixing well.
  • With your hands or a spoon, knead the mixture together until it forms a sticky dough.
  • Scoop out small portions of the mixture and roll them into bite-sized balls.
  • Place the formed bites onto a lined baking sheet, spacing them apart.
  • Refrigerate for about 30 minutes to allow the bites to firm up.

Storage

  • Once firm, store any leftovers in an airtight container in the fridge for up to a week, or freeze for longer storage options.

Notes

Ensure the almond butter is soft to blend easily. If the mixture feels too crumbly, add a tablespoon of water.
