Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a large bowl, sift together all-purpose flour, granulated sugar, baking soda, salt, and cocoa powder.
  • In another bowl, mix vegetable oil, buttermilk, eggs, purple food coloring, vanilla extract, and white vinegar until blended.
  • Gradually add the wet mixture to the dry ingredients and mix until smooth. Stir in the cooled brewed coffee.
  • Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes or until a toothpick comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Frosting Preparation

  • Beat the softened cream cheese and butter until smooth and fluffy.
  • Gradually incorporate powdered sugar and vanilla extract, beating until rich and creamy.

Assembling the Cake

  • Place one layer of the cooled cake on a serving plate and spread a layer of frosting on top.
  • Add the second cake layer and frost the top and sides.
