Ingredients

For the Pistachio Cloud

  • 200 g ricotta cheese This creamy and tender cheese serves as the base for our fluffy cloud.
  • 40 g pistachio paste or finely ground pistachios Rich and aromatic, awakens the nutty undertones.
  • 1 tbsp cream or milk Enhances the luxurious mouthfeel.

For the Platter Assembly

  • 30 g shelled pistachios Adds texture and burst of flavor.
  • 60 ml neutral oil (grapeseed or sunflower) A drizzle adds richness.
  • 1 ball burrata (about 125 g) The star of the show, creamy interior.
  • 2–3 tbsp pomegranate seeds Provides a refreshing contrast.

Instructions

Make the pistachio 'cloud'

  • Add the ricotta cheese to your blender, followed by the pistachio paste or finely ground pistachios and cream. Blend until smooth and fluffy.
  • Season to taste with salt and white pepper, then chill in the refrigerator until ready to assemble.

Make pistachio oil

  • Blend shelled pistachios and neutral oil in a separate blender until smooth.
  • Strain through a fine mesh sieve or cheesecloth to remove solids, leaving vibrant pistachio oil.

Assemble

  • Spread the whipped pistachio-ricotta mixture on a large serving platter, forming a cloud-like shape.
  • Nestle the burrata in the center.

Finish

  • Drizzle pistachio oil over the platter and scatter pomegranate seeds on top.
  • Add freshly cracked black pepper and optional micro herbs or edible flowers.

Serve

  • Serve with a selection of toasted sourdough, flatbread, or crackers. Best enjoyed at room temperature.

Notes

For the best results, allow the assembled dish to rest to meld flavors. Careful with blending time to maintain texture.
