Preparation

  • In a high-speed blender or food processor, combine the frozen pineapple, coconut milk, sweetener (if using), vanilla extract, and salt. Blend until smooth and thick, similar to soft serve.
  • If the mixture is too thick, add a splash more milk to loosen it but keep it scoopable and thick. For a firmer texture, freeze for about 30 minutes before serving.
  • Layer fresh pineapple chunks into a clear cup or bowl. Spoon or pipe the pineapple ice cream over the chunks to create tall swirls.
  • Garnish with extra pineapple pieces, a sprinkle of coconut flakes, or a drizzle of honey.

Notes

Consider adding lime zest for a citrus punch or topping with crushed nuts for added texture. Freeze bowls beforehand for better presentation and temperature maintenance.
