Ingredients

Crust

  • 1.5 cups graham cracker crumbs These crumbs create a perfectly crispy and buttery base for the cheesecake.
  • 0.25 cups sugar A touch of sweetness that enhances the crust.
  • 0.5 cups butter, melted Adds richness and helps form the crust.

Cheesecake Filling

  • 32 oz cream cheese, softened This creamy cheese is the star of the show.
  • 1 cup sugar Sweetness to balance the rich cream cheese and peanut butter.
  • 1 cup creamy peanut butter Provides rich and nutty flavors.
  • 4 large eggs Helps to set the cheesecake while lending a soft texture.
  • 1 teaspoon vanilla extract A mild yet aromatic flavor that rounds out the sweetness.
  • 1 cup sour cream Introduces a tangy aspect that contrasts beautifully with the sweetness.

Topping

  • 1 cup strawberry or grape jelly Provides a fruity, sweet layer on top.
  • 1 tablespoon lemon juice Adds brightness to the jelly.
  • whipped cream for garnish Adds an elegant touch.
  • chopped peanuts for garnish A crunchy finish that complements the cheesecake.

Instructions

Preparation

  • Preheat the oven to 325°F (165°C) and grease a 9-inch springform pan.
  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are well-coated, then press the mixture into the bottom of the prepared pan.
  • In a large bowl, beat the softened cream cheese and sugar until smooth. Mix in peanut butter, then add eggs one at a time, beating well after each addition. Stir in vanilla extract and sour cream.

Baking

  • Pour the cheesecake mixture over the crust and smooth the top with a spatula.
  • Bake for 60-65 minutes, or until the center is set. Cool on a wire rack for 10 minutes, then cool completely before removing the sides of the pan.

Topping

  • Heat the jelly and lemon juice in a small saucepan over low heat until melted. Allow to cool slightly before spreading over the cheesecake.
  • Garnish with whipped cream and chopped peanuts before serving.

Notes

For a more intense peanut butter flavor, consider using crunchy peanut butter instead of creamy. Allowing the cheesecake to chill overnight enhances the flavors.
