Ingredients

For the Chicken

  • 4 pieces boneless, skinless chicken thighs or breasts

For the Noodles

  • 8 oz egg noodles or pasta of choice
  • 2 tbsp butter for coating noodles
  • 1 tbsp fresh parsley, chopped for garnish

Instructions

Season the Chicken

  • Season the chicken thighs with salt, black pepper, and smoked paprika.
  • Heat olive oil and 2 tablespoons of unsalted butter in a large pan over medium-high heat.
  • Sear the chicken for 4-5 minutes per side until golden brown. Remove chicken and set aside.

Prepare the Sauce

  • In the same pan, add minced garlic and sauté for about a minute until fragrant.
  • Pour in chicken broth and scrape up any brown bits from the pan.
  • Stir in heavy cream, grated Parmesan cheese, Dijon mustard, Italian seasoning, and red pepper flakes.
  • Allow the sauce to simmer and thicken for 2-3 minutes.

Cook the Noodles

  • Bring salted water to a boil. Add egg noodles and cook according to package instructions until al dente.
  • Drain and toss noodles with 2 tablespoons of butter and fresh parsley.

Finish the Dish

  • Return the seared chicken to the pan and spoon sauce over it.
  • Simmer for another 5 minutes to ensure chicken is cooked through.
  • Serve chicken over buttered noodles and garnish with extra Parmesan and parsley.

Notes

For a healthier option, use chicken breasts or turkey, whole wheat noodles, and add vegetables like spinach or broccoli. Substitute heavy cream with coconut milk for dairy-free.
