Ingredients

For the crust

Instructions

Preparation

  • In a medium bowl, mix the crushed vanilla wafers with the melted butter until well combined. Press this mixture firmly into the bottom of a 9x13-inch dish and chill in the refrigerator for 20 minutes.
  • In a separate large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in half of the whipped cream until well combined.

Layering

  • Split the cream cheese mixture into two bowls. Add the strawberry puree and gelatin powder (if using) to one bowl and mix until fully combined.
  • Spread the plain cream cheese mixture evenly over the chilled vanilla wafer crust. Sprinkle the diced fresh strawberries evenly over this layer.
  • Carefully pour the strawberry-flavored mixture on top and smooth it out with a spatula. Cover with plastic wrap and chill for at least 4 hours.

Garnish and serve

  • Top with fresh strawberry slices, whipped cream swirls, and crushed vanilla wafers before serving.

Notes

Use fresh strawberries in season for the best taste. You can substitute store-bought whipped cream to simplify the process. For lower sugar, consider using a sugar substitute in the cream cheese layer.
