Ingredients

Instructions

Make the crust

  • Blitz the crackers into fine crumbs using a food processor.
  • Combine the crumbs with melted butter and thyme in a mixing bowl.
  • Press the mixture firmly into the base of a lined tart tin.
  • Refrigerate for at least 30 minutes.

Mix the filling

  • Beat together the cream cheese, goat cheese, sour cream, chives, parsley or dill, lemon zest, salt, and pepper until smooth and fluffy.

Assemble

  • Spoon the cheese filling into the chilled tart crust and smooth the top.
  • Return to the refrigerator for at least 2 hours to set.

Make the salsa

  • Combine the diced peaches, fresh thyme, chopped chili, lemon juice, olive oil, and a pinch of salt in a bowl.
  • Let the mixture rest for 10-15 minutes to meld flavors.

Top and serve

  • Spoon the peach salsa over the set tart.
  • Garnish with microgreens, thyme sprigs, and cracked pepper.
  • Serve cold or slightly chilled.
