Ingredients

Crust

  • 2 cups golden Oreo crumbs
  • 3 tablespoons melted butter
  • 1/4 teaspoon salt
  • 1 teaspoon red gel food coloring

Filling

  • 2 cups powdered sugar (divided)
  • 2 cups heavy whipping cream
  • 2 packages (8 oz each) softened cream cheese
  • 2 teaspoons vanilla extract (divided)
  • 1 package (3.94 oz) blue raspberry Jell-O
  • 1 cup boiling water

Frosting

  • 3 cups powdered sugar
  • 6 tablespoons softened butter
  • 6 oz softened cream cheese
  • to taste Fresh blueberries
  • to taste Fresh halved strawberries

Instructions

Preparation of Crust

  • Blend golden Oreo crumbs in a food processor until fine. Add melted butter, salt, and red gel food coloring; pulse until combined.
  • Lightly spray a 9-inch springform pan and press the crust mixture evenly into the base and sides. Place in the freezer.

Make the Blue Jell-O Layer

  • Dissolve blue raspberry Jell-O in boiling water. Stir until fully dissolved and let it cool.

Whip the Cream

  • In a large bowl, whip heavy cream, 1 cup of powdered sugar, and 1 teaspoon of vanilla until soft peaks form. Set aside.

Prepare the Cream Cheese Filling

  • Beat softened cream cheese with 1 cup of powdered sugar and 1 teaspoon of vanilla until smooth.
  • Gently fold half of the whipped cream into the cream cheese mixture.

Combine Layers

  • Fold the cooled blue Jell-O into the remaining whipped cream.
  • Spread the cream cheese layer over the chilled crust, then pour the blue Jell-O mixture over it. Refrigerate for at least 5 hours or overnight.

Make the Frosting

  • Beat softened cream cheese and butter until fluffy. Gradually mix in powdered sugar until the desired consistency is reached.
  • Add the remaining vanilla extract and mix well.

Finalize and Serve

  • Pipe the frosting around the edges of the cheesecake and top with fresh blueberries and halved strawberries.

Notes

Ensure your cheesecake sets thoroughly in the refrigerator for perfect slicing. You may add edible sparkles for decoration.
