Instructions

Preparation

  • Start by lining a 9x9-inch baking pan with parchment paper and leave an overhang on the sides.
  • In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and crumbly, then press firmly into the bottom of the prepared pan. Refrigerate while you work on the filling.
  • In a large mixing bowl, beat the softened cream cheese and creamy peanut butter until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy and well combined.

Assembly

  • Spread the peanut butter filling over the chilled graham cracker crust and smooth the top with a spatula. Return the pan to the refrigerator to set.
  • In a microwave-safe bowl, combine the semi-sweet chocolate chips and heavy cream. Heat in 30-second intervals, stirring after each interval until fully melted and smooth.
  • Pour the melted chocolate over the peanut butter layer, ensuring it covers evenly.
  • Sprinkle crushed peanuts and mini chocolate chips over the chocolate layer.

Chill and Serve

  • Allow the cheesecake bites to chill in the refrigerator for at least 2 hours or until fully set. Lift out of the pan using the parchment paper and cut into squares or rectangles.

Notes

For an extra layer of flavor, mix in a pinch of sea salt to the chocolate layer or the peanut butter filling. Alternative toppings or crust options can be used as per preference.
