Instructions

Preparation

  • Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix until it resembles wet sand. Press into the bottom of a 9-inch springform pan and freeze.
  • In a large mixing bowl, beat softened cream cheese until smooth. Gradually add sweetened condensed milk, heavy cream, and vanilla extract, mixing until smooth.
  • Pour melted chocolate chips and cocoa powder into the cream cheese mixture and stir until fully combined.

Assembly

  • Remove the crust from the freezer and pour the cheesecake ice cream mixture over it. Smooth the top with a spatula.
  • Cover with plastic wrap and freeze for at least 6 hours or overnight.

Serving
