Ingredients

Main Ingredients

  • 0.5 cup beef stock or broth Enhances the flavor of the stew.

  • 1 tablespoon bouillon powder
  • 0.5 teaspoon thyme
  • 0.5 teaspoon curry powder

Instructions

Preparation

  • Wash the beef under cold running water and place it in a pot with water, salt, and black pepper. Bring to a boil, then reduce heat and simmer for about 20–25 minutes until tender.
  • Blend the plum tomatoes, red bell pepper, habanero pepper, and half of the chopped onion until smooth.

Cooking

  • Chop the remaining half of the onion finely and heat the olive oil in a separate pan. Sauté the onions until soft and translucent.
  • Stir in the blended tomato mixture and add a little black pepper. Simmer on medium heat for about 5 minutes.
  • Incorporate the cooked beef into the pan with 1/2 cup of beef stock. Stir gently to combine.
  • Season the stew with thyme, bouillon powder, and curry powder. Adjust with more salt if needed.
  • Cover the pot and let the stew simmer on medium-low heat for about 10 minutes.

Serving

  • Serve the Nigerian Beef Stew hot alongside rice, fried plantains, or fresh bread.

Notes

Use fresh, high-quality ingredients for best flavor. Feel free to add more habanero for heat or incorporate other vegetables like carrots or potatoes for added nutrition.
