Filling

  • 1 block mozzarella cheese, cut into strips The star ingredient that provides the gooey center.

Breading

  • 1 cup all-purpose flour For coating the rings.
  • 2 large eggs, beaten Helps bind the coating.
  • 1.5 cups panko breadcrumbs Provides a crunchy texture.
  • 1 tsp garlic powder Adds flavor to the breading.
  • 0.5 tsp salt Enhances the flavor.
  • 0.5 tsp black pepper Adds a slight kick.

For Frying

  • as needed vegetable oil For frying the onion rings.

Garlic Butter

  • 3 tbsp unsalted butter For brushing over the onion rings.
  • 2 cloves garlic, minced For flavor in the garlic butter.
  • pinch salt To enhance flavor.

Garnish

  • as needed fresh parsley, chopped For garnish before serving.

Instructions

Preparation

  • Start by carefully separating your onion slices into rings. Match similar sizes to make the assembly easier.
  • Take a mozzarella strip and place it between two onion rings, gently pressing to create a 'sandwich' that contains the cheese.

Coating

  • Dip each assembled ring into flour, making sure it is fully coated.
  • Immerse it in the beaten egg, allowing the excess to drip off.
  • Roll the ring in a mixture of panko breadcrumbs, garlic powder, salt, and pepper. Press firmly to ensure the coating sticks well.

Freezing

  • Place your coated onion rings on a baking sheet and freeze them for about 30 minutes.

Frying

  • Heat vegetable oil in a deep skillet to 350°F (175°C).
  • Fry the onion rings in batches, cooking them for about 2–3 minutes per side until they turn a rich, golden color.
  • Once cooked, drain the rings on paper towels to absorb excess oil.

Garlic Butter Glaze

  • In a separate pan, melt the butter over medium heat and add the minced garlic. Sauté for about a minute.
  • Brush this garlic butter generously over the hot onion rings.

Serving

  • Sprinkle the freshly chopped parsley over your golden onion rings before serving. Enjoy them immediately while they’re warm and gooey.

Notes

If in a warm environment, chill the onion rings longer than 30 minutes to prevent cheese leakage. Experiment with different cheeses for unique flavors. Don't skip the panko for crispiness.
