Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Prepare your baking pans by greasing and lightly flouring three 8-inch round cake pans.
  • In a medium mixing bowl, whisk together the flour, baking powder, and salt.
  • In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  • Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the whole milk, mixing until just combined.
  • Fold in the mini chocolate chips and add green food coloring to achieve the desired mint hue.
  • Divide the batter evenly among the prepared pans and bake for about 25-30 minutes.

Frosting and Assembling

  • While the cakes cool, create the frosting by beating the softened butter until creamy and smooth.
