Ingredients

For the crust

  • 2 large zucchinis, sliced into 1⁄2-inch thick rounds Fresh and firm for best results.

Instructions

Preparation

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Place the sliced zucchini rounds on the prepared baking sheet and lightly brush them with olive oil.
  • Evenly sprinkle garlic powder and Italian seasoning over the zucchini rounds.
  • Bake in the preheated oven for 5 minutes.

Assembly

  • Remove the baking sheet from the oven and spread a spoonful of pizza sauce over each zucchini slice.
  • Sprinkle shredded mozzarella and grated Parmesan cheese over the sauce.
  • Add pepperoni or any other toppings if desired.
  • Return the baking sheet to the oven and bake for an additional 5–7 minutes, or until the cheese is bubbly and golden brown.
  • Sprinkle freshly chopped basil or parsley on top before serving.

Notes

For extra crunch, consider pre-sautéing the zucchini slices. Experiment with toppings like sautéed bell peppers or mushrooms. If you're looking for a healthier option, try adding veggies or use dairy-free cheese.
