  • 100 g unsalted butter, softened The star of our butter candle.
  • 1 clove garlic, minced Aromatic and pungent, adds depth and warmth.
  • 1 tsp finely chopped fresh thyme or rosemary These herbs provide an earthy aroma.
  • 1/4 tsp chili flakes (optional) For those who enjoy a touch of heat.
  • Pinch of flaky salt A finishing touch that elevates every bite.

For Serving

  • 1 thick breadstick, wooden skewer, or edible rosemary sprig (for the 'wick') Functions as the wick for our butter candle.
  • Warm crusty bread or focaccia Perfect for scooping up the delicious dip.
  • Fresh herbs or chili oil (optional garnish) Enhances visual appeal and flavor.

Instructions

Preparation

  • Place ricotta cheese into a food processor or mixing bowl. Add cream, olive oil, salt, pepper, and lemon zest. Whip until ultra-smooth and airy, about a minute.
  • Spread the ricotta into a shallow dish, leaving space in the center for the butter candle.

Making the Butter Candle

  • In a separate bowl, mix softened butter with garlic, fresh herbs, chili flakes, and a pinch of flaky salt until fully incorporated.
  • Shape the butter mixture into a short, thick cylinder and chill until it firms up.
  • Insert a breadstick, skewer, or rosemary sprig into the center of the butter candle and chill again until solid.

Serving

  • Place the butter candle upright in the center of the ricotta dip. If using a skewer, light the wick and watch the butter melt into the dip.
  • Swirl the melted butter into the ricotta and serve immediately with warm bread or focaccia.

Notes

Ensure ingredients are at room temperature for easy mixing. Chill adequately when forming the butter candle—it should hold its shape.
