Salmon

  • 1 pound sockeye salmon fillet Cut into four 1/4-pound pieces.

Stuffing

  • 1/2 cup sun-dried tomatoes Adds a sweet tanginess that pairs well with fish.
  • 3 cups baby spinach Fresh spinach rich in iron and vitamins.
  • 1/2 cup feta cheese crumbles Adds a creamy texture and tangy flavor.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a small saucepan, heat the sun-dried tomatoes over medium heat until sizzling and fragrant.
  • Add the fresh baby spinach and cook until it wilts, then remove from heat.
  • Stir in the feta cheese crumbles and season with sea salt then set aside.
  • Slice each salmon fillet horizontally, leaving a 1/4 to 1/2 inch attached to create a pocket for stuffing.
  • Brush the outside of the salmon with avocado oil and sprinkle with sea salt.

Cooking

  • Stuff each salmon fillet generously with the spinach-tomato mixture.
  • Place the stuffed fillets on the lined baking sheet and bake for 25 to 30 minutes or until cooked through.

Notes

Consider using fresh herbs instead of dried for better flavor. You can add lemon zest to the stuffing for a flavor boost. Experiment with other vegetables for stuffing.
