  • 2 large large eggs, lightly beaten
  • 2 cans canned salmon, drained (6 oz each)
  • 1 cup chopped fresh spinach or 1/2 cup thawed, squeezed frozen spinach
  • 1/3 cup crumbled feta cheese
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 cup breadcrumbs (panko or regular)
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh dill optional
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • Olive oil (for pan-frying)
  • Tzatziki sauce (optional for serving)
  • Lemon wedges (optional for serving)

Instructions

Preparation

  • Drain the canned salmon thoroughly, then flake it into a large bowl using a fork. Remove any bones or skin if desired.
  • Heat a non-stick pan over medium heat and sauté the chopped spinach for about 2 minutes until it wilts. Allow it to cool slightly, then squeeze out any excess moisture.
  • In the bowl with the flaked salmon, add the sautéed spinach, red onion, garlic, crumbled feta, breadcrumbs, beaten eggs, fresh parsley, dill (if using), lemon juice, lemon zest, oregano, and season with salt and pepper. Mix thoroughly.
  • Form the mixture into 6 to 8 patties, each about 3 inches wide.

Cooking

  • Heat a generous amount of olive oil in a skillet over medium heat. Once hot, carefully place the patties in the skillet and cook for about 3-4 minutes per side until golden and crisp.

Serving

  • Serve the patties warm with tzatziki sauce and lemon wedges. These patties also pair wonderfully with a fresh salad or warm pita bread.

Notes

For an extra flavor boost, add chili flakes to the mixture for a mild kick. You can refrigerate the mixture and form patties a day ahead to expedite cooking.
