Ingredients

Dough Ingredients

  • 1.5 cups self-rising flour Gives the flatbreads a light, airy texture.
  • 3/4 cup Greek yogurt Adds moisture and richness to the dough.

Filling Ingredients

  • 3.5 oz crumbled feta cheese Provides a distinctive Mediterranean flavor.
  • 3.5 oz spinach, wilted and chopped Adds color and nutrients.
  • 2 tbsp cream cheese Enhances the filling's richness.
  • 2 cloves garlic, minced Lends a savory note.
  • 1 handful fresh mint, chopped Infuses filling with refreshing flavor.
  • 1 tsp ground black pepper Adds warmth and depth.
  • 1 tbsp mint sauce Enhances the fresh mint flavor.
  • 1 tbsp olive oil Used for cooking the flatbreads.

Instructions

Preparation

  • Combine the Greek yogurt and self-rising flour in a large mixing bowl. Knead until a smooth, elastic dough forms, about 5 minutes. Cover and let it rest for 10-15 minutes.
  • In a separate bowl, mix wilted spinach, crumbled feta, cream cheese, minced garlic, chopped mint, and black pepper until well combined.

Shaping

  • Divide the dough into four equal balls, then flatten each into a round disc about 6 inches in diameter. Place a scoop of filling in the center, fold over to seal, and press the edges.

Cooking

  • Heat a dry non-stick pan over medium heat. Cook each stuffed flatbread for 3-5 minutes on each side until golden and crispy.

Serving

  • Mix olive oil and mint sauce in a small bowl. Serve warm flatbreads sliced in half with sauce on the side.

Notes

Experiment with herbs like dill or basil, and consider adding red pepper flakes for spice. Let the filled flatbreads rest for 10 minutes before cooking for melded flavors.
