Instructions

Cooking the Beef

  • Pour 1 tablespoon of olive oil into a large skillet over medium-high heat and let shimmer.
  • Add 1 lb of ground beef, breaking it into smaller pieces with a spatula. Cook until golden brown, draining excess fat if necessary.

Sautéing Aromatics

  • Toss in 1 small chopped red onion and 3 minced cloves of garlic. Sauté until fragrant, about 2-3 minutes.

Adding Vegetables

  • Stir in 1 chopped red bell pepper, 1 chopped yellow bell pepper, and 1 diced medium zucchini. Sauté for 3-4 minutes until slightly tender.

Final Seasoning

  • Add 1 cup of halved cherry tomatoes, salt, black pepper, smoked paprika, ground cumin, dried oregano, and crushed red pepper flakes. Simmer for 2-3 minutes.

Finishing Touches

  • Remove from heat, stir in 2 tablespoons of chopped parsley and 1 tablespoon of lemon juice. Add 1/2 cup of crumbled feta cheese if desired.

Notes

Serve over rice, quinoa, or in pitas. Store leftovers in an airtight container for up to 3 days. Can be frozen for up to 2 months.
