Instructions

Preparation

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the chopped onion and minced garlic. Cook for 2–3 minutes until they become soft and fragrant.
  • Introduce the ground beef to the skillet, breaking it apart with a spatula. Cook for 5–7 minutes until browned all over.
  • Stir in the sliced red bell pepper and zucchini. Cook for 3–4 minutes until they are tender yet slightly crunchy.
  • Add the halved cherry tomatoes, dried oregano, paprika, salt, and pepper. Stir well and cook for an additional 2–3 minutes.
  • Remove from heat and garnish with freshly chopped parsley and optional crumbled feta cheese. Serve warm.

Notes

To enhance flavors, consider marinating the ground beef in olive oil, garlic, and herbs beforehand. Add red pepper flakes for a spicy kick, or swap in seasonal vegetables like eggplant or spinach.
