Instructions

Preparation

  • Start by heating 1 tablespoon of olive oil in a pan over medium heat. Add the chopped spinach, sun-dried tomatoes, garlic powder, and dried oregano. Sauté for about two minutes until the spinach wilts.
  • Remove the mixture from heat and set aside.

Assembling

  • Spread softened butter on one side of each slice of bread.
  • With the buttered side down, on a skillet, lay the first slice of bread. Layer it with mozzarella, feta, and cheddar.
  • Spoon sautéed spinach and sun-dried tomato mixture over the cheese and top with another slice of bread (buttered side facing up).

Grilling

  • Heat the skillet over medium-low heat. Place the assembled sandwich onto the skillet.
  • Cook for 3-4 minutes until golden brown and cheese starts to melt. Press down slightly with a spatula for even crispness.
  • Flip the sandwich and repeat until perfectly browned and golden.

Serving
