Instructions

Preparation

  • In a large mixing bowl, combine your cold mashed potatoes, shredded cheddar cheese, large egg, all-purpose flour, chopped chives, garlic powder, salt, and pepper. Stir until mixture is smooth and thick.
  • Set your oven to preheat at 400°F (200°C).
  • Grease a mini muffin pan generously with butter or oil.
  • Fill each muffin cup with the potato mixture, ensuring you fill them to the top and smooth the surface.

Baking

  • Place the filled muffin pan in the preheated oven and bake for 20–25 minutes until golden brown.
  • Let cheese puffs cool for about 5 minutes before removing them from the pan.

Serving

  • For an extra touch, sprinkle some additional chives on top and serve warm, paired with sour cream or your favorite dipping sauce.
