Instructions

Preparation

  • Preheat your oven to 200°C (390°F).
  • In an ovenproof skillet or deep baking dish, combine the orzo, minced garlic, optional chili flakes, oregano, smoked paprika, sun-dried tomatoes, tomato paste, and vegetable or chicken broth.

Baking

  • Place the block of feta cheese right in the center of the mixture and drizzle it generously with olive oil.
  • Cover the dish with foil and bake for about 25 minutes.

Finishing Touches

  • Remove the foil, pour in the heavy cream or coconut cream, and gently stir to incorporate.
  • Return the dish to the oven uncovered for another 10 minutes, watching closely as the feta melts.
  • Season to taste with salt and pepper, and top with freshly chopped herbs, extra chili flakes or lemon zest if desired.
  • Serve warm in bowls, possibly with crusty bread.
