Ingredients

For the Gnocchi

  • 125 g burrata cheese, drained and chopped Adds richness with a delightful interior surprise.
  • 1 tbsp grated Parmesan Intensifies flavor.

For the Sauce

  • 1 tbsp olive oil Fragrant oil for sautéing garlic.
  • 2 cloves garlic, minced Adds depth and aroma.
  • 1/2 tsp chili flakes Optional for a hint of heat.
  • 150 ml heavy cream Creates a luxurious sauce.
  • 40 g sun-dried tomatoes, chopped Adds complexity and sweetness.
  • 30 g grated Parmesan For finishing touch.
  • to taste salt & pepper Classic seasoning.
  • fresh basil for garnish Brightens the dish.

Instructions

Creating the Dough

  • Combine the mashed potatoes, egg yolk, salt, and flour in a large bowl until you’ve formed a soft, pliable dough.
  • Avoid overmixing to prevent tough texture.

Forming the Gnocchi

  • Divide the dough into small sections, flatten each, and place a spoonful of chopped burrata and grated Parmesan inside.
  • Seal the edges and roll into smooth dumplings.

Cooking the Gnocchi

  • Bring a large pot of salted water to a gentle simmer.
  • Drop in the filled gnocchi and cook until they float to the surface, about 2–3 minutes.
  • Transfer to a paper towel to drain.

Preparing the Sauce

  • Warm the olive oil in a pan over medium heat and sauté the minced garlic until fragrant.
  • Add chili flakes if desired, then stir in the heavy cream and sun-dried tomatoes, simmering for 3–4 minutes.

Finishing the Sauce

  • Stir in the grated Parmesan and season with salt and pepper.

Tossing the Gnocchi

  • Gently add the cooked gnocchi to the sauce, tossing to coat.

Plating and Garnishing

  • Plate the gnocchi and garnish with fresh basil leaves, a drizzle of olive oil, and additional Parmesan if desired.

Notes

For quicker preparation, store-bought gnocchi can be used. Allow cooked gnocchi to rest on paper towels to preserve texture.
