Instructions

Preparation

  • Pound the chicken breasts to about 3/4-inch thickness.
  • Season both sides of the chicken with salt, pepper, garlic powder, onion powder, and paprika if desired.
  • Coat each chicken breast completely in flour, then shake off any excess.
  • If using ranch dressing, dip the floured chicken pieces into it next.
  • Press each breast into a mixture of breadcrumbs and Parmesan cheese.

Cooking

  • In a large oven-safe skillet, heat olive oil over medium heat.
  • Sear the chicken for 3–4 minutes per side until golden brown.
  • Once seared, remove the skillet from heat.
  • Preheat your oven to 400°F (200°C).
  • Spread a thin layer of ranch or garlic dressing over each piece of chicken.
  • Top with shredded mozzarella and an extra sprinkle of Parmesan.
  • Bake in the preheated oven for 10–15 minutes, or until the chicken reaches an internal temperature of 165°F and the cheese is melted and bubbly.
  • Allow the dish to rest for a few minutes, then sprinkle with fresh parsley before serving.

Notes

For the best results, avoid overcrowding the skillet while searing chicken. For extra crispiness, consider adding crispy onion bits to the breadcrumb mixture. Experiment with different cheeses and herbs for flavor variations.
