Preparation

  • In a large bowl, combine almond flour, shredded coconut, protein powder, lemon zest, and a pinch of salt.
  • Add the honey (or maple syrup), lemon juice, melted coconut oil, and vanilla extract. Stir until a sticky dough forms.
  • Scoop out small amounts of dough and roll them into bite-sized balls.
  • Optional: Roll each ball in extra shredded coconut for added flavor and texture.
  • Refrigerate the formed balls for 30 minutes to firm them up.
  • Store the balls in an airtight container in the fridge for up to a week.
