Instructions

Cooking Orzo

  • Bring a pot of salted water to a boil, then add the orzo. Cook according to package instructions or until tender, usually around 8–10 minutes.
  • Once done, drain and set aside, allowing the orzo to hold its shape and prevent it from clumping.

Cooking Chicken

  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the diced chicken breast, seasoning it with garlic powder, salt, and black pepper. Stir occasionally until the chicken is golden and cooked through, about 5–7 minutes.
  • Remove the chicken from the skillet and set it aside to rest.

Cooking Vegetables

  • In the same skillet, add the remaining tablespoon of olive oil.
  • Add the chopped zucchini, bell pepper, and broccoli florets. Sauté for 3–4 minutes until the vegetables are tender yet still retain a slight crunch.

Combining Ingredients

  • Return the chicken back to the skillet, then add the orzo along with lemon juice, lemon zest, oregano, and red pepper flakes (if using).
  • Stir everything together gently, allowing the flavors to meld for about 2 minutes.
  • Sprinkle the grated Parmesan cheese over the top and give it one last stir.

Serving

  • Serve hot, garnished with freshly chopped parsley for a touch of color and fresh flavor.

Notes

Consider marinating your chicken in lemon juice and garlic for an hour before cooking to enhance its flavor and tenderness. Feel free to add more vegetables or substitute quinoa for a grain-free variant. A splash of broth can add depth to the flavor. For crunch, top with toasted pine nuts or sunflower seeds.
