Ingredients

For the Salmon

For the Roasted Tomatoes

For the Pasta

  • 12 oz linguine Perfectly hugs the roasted tomatoes.

Instructions

Preparation

  • In a mixing bowl, combine olive oil, fresh lemon juice, minced garlic, chopped basil, lemon zest, salt, and pepper. Brush this mixture onto the salmon fillets and let them marinate for 15 minutes.

Roasting

  • Preheat your oven to 400°F (200°C). Toss cherry tomatoes with olive oil, remaining garlic, oregano, salt, and pepper. Arrange the salmon on one baking tray and the tomatoes on another.
  • Roast the tomatoes for 15-20 minutes until soft and caramelized, and roast the salmon for about 12-15 minutes until it flakes easily with a fork.

Cooking Pasta

  • While the salmon and tomatoes are roasting, bring a large pot of salted water to a boil. Add linguine and cook according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.

Combining

  • In a large skillet over medium heat, toss the cooked pasta with the roasted cherry tomatoes and their juices. Add butter if using to create a silky texture, and pour in reserved pasta water as needed.

Finishing Touches

  • Mix in grated Parmesan cheese, chopped basil, and capers if included. Plate the pasta, placing a salmon fillet on top of each serving. Garnish with chopped basil and serve with lemon wedges.

Notes

Marinate the salmon for up to an hour for deeper flavors. Experiment with herb changes or add additional vegetables to the pasta.
