Instructions

Preparation

  • Preheat the oven to 425°F (220°C).
  • Season the salmon: Generously sprinkle salt and pepper on both sides of each salmon fillet.
  • Prepare the filling: In a medium bowl, mix the ricotta cheese, grated Parmesan, chopped basil, lemon zest, salt, and pepper until well-combined.
  • Spread the filling: Evenly spread a generous amount of the cheese mixture over each salmon fillet.
  • Add the asparagus: Place a few asparagus spears on top of the cheese-covered salmon fillets.
  • Roll tightly: Carefully roll each salmon fillet up tightly, enclosing the asparagus within.
  • Arrange on a baking sheet: Place the rolled salmon seam-side down on a greased baking sheet.

Cooking

  • Bake the salmon rolls in your preheated oven for 15 to 20 minutes or until the salmon is cooked through.
  • Make the sauce: In a small pan over medium heat, melt the butter, then add the chicken broth and lemon juice. Stir in the cornstarch mixture and cook until thickened.

Serving

  • Once the salmon rolls are done, spoon the sauce over the top and serve immediately.

Notes

Consider adding garlic to the ricotta mixture for extra flavor. A pinch of red pepper flakes can enhance the dish, and garnish with fresh basil and lemon zest for presentation.
