Ingredients

For the Rolls

  • 4 pieces salmon fillets (skinless, sliced thin for rolling) Use fresh salmon for best flavor.
  • 1 piece lemon (zest and juice) Fresh lemon enhances flavor.
  • 1/2 cup ricotta or cream cheese Cream cheese can be replaced with Greek yogurt for a lighter option.
  • 2 tablespoons chopped fresh basil Plus extra for garnish.
  • 1 clove garlic (minced)
  • to taste none salt & pepper
  • 1 tablespoon olive oil or melted butter For drizzling and flavor.
  • 1 bunch fresh asparagus Trimmed for even cooking.

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Trim the woody ends from the asparagus and place on a lined baking sheet.
  • Drizzle the asparagus with olive oil and season with salt and pepper.

Making the Filling

  • In a small bowl, mix together the ricotta or cream cheese with lemon zest, minced garlic, chopped basil, and a pinch of salt and pepper until creamy.

Assembly

  • Lay out each salmon fillet and spread 1–2 tablespoons of the filling across the center of each fillet.
  • Carefully roll up the fillets, ensuring the filling stays inside.

Baking

  • Place the salmon rolls seam-side down on top of the prepared asparagus.
  • Drizzle lemon juice and olive oil over the tops, then bake for about 18–20 minutes, or until the salmon is cooked through and lightly golden.

Serving

  • Remove from the oven and garnish with extra fresh basil and lemon wedges.
  • Serve and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently to avoid drying out the salmon.
