For the Salmon Rolls

  • 4 pieces salmon fillets (5 oz each), skinless Fresh and flaky salmon.

Instructions

Preparation

  • Preheat your oven to 425°F (220°C).
  • Sprinkle salt and pepper generously over each salmon fillet.
  • In a mixing bowl, combine the ricotta cheese, grated Parmesan, chopped basil, lemon zest, and salt and pepper. Stir until well blended.
  • Evenly spread the ricotta mixture on each salmon fillet.
  • Lay asparagus spears across the center of each fillet.
  • Carefully roll each salmon fillet tightly, starting from one end with the asparagus and mixture inside.
  • Place the rolls seam-side down on a greased baking sheet.

Cooking

  • Bake the salmon rolls in the preheated oven for 15 to 20 minutes, or until cooked through and flaky.
  • While the salmon rolls are baking, melt butter in a saucepan over medium heat and add chicken broth and lemon juice; bring to a gentle simmer.
  • Stir in the cornstarch mixture and cook for an additional 3 to 5 minutes until the sauce thickens.
  • Drizzle the thickened sauce over the salmon rolls just before serving.

Notes

Use fresh basil for the best flavor. Customize fillings with different vegetables or herbs. Avoid overcooking to keep the salmon flaky. Pair with a light salad or steamed vegetables.
