Ingredients

For the sandwich

  • 2 tablespoons butter (for toasting) Melted butter for crisping the bread.

  • 1/2 cup well-drained sauerkraut Tangy and crunchy.
  • 8 oz beef kielbasa sausage Smoky and hearty.
  • 2 tablespoons Russian dressing Creamy and zesty.

Instructions

Preparation

  • Warm the beef kielbasa in a pan or on the grill until it develops a crispy exterior. Once done, set aside to cool slightly before slicing diagonally into 1/4-inch pieces.
  • Lay out the slices of dark pumpernickel bread on a flat surface. Pile creamy Gouda cheese on each slice.
  • Spread zesty Russian dressing over the cheese. Layer sauerkraut on two of the bread slices, and add the sliced kielbasa to the remaining two.

Cooking

  • Preheat a griddle or skillet over medium heat and melt the butter evenly across the surface.
  • Place the bread slices, toppings side up, on the hot griddle. Cover loosely with foil to ensure the cheese melts thoroughly and the bread crisps nicely.

Assembly

  • Combine one slice with sauerkraut with one slice that has kielbasa on it to assemble your sandwich.

Notes

Consider adding a sprinkle of caraway seeds with your sauerkraut for enhanced flavor. Experiment with different cheeses like Swiss. Use light butter or olive oil spray for fewer calories, or add jalapeƱos for a spicy kick.
