Instructions

Preparation

  • Preheat the oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In another bowl, cream the softened butter and granulated sugar together until light and fluffy. Incorporate the eggs one at a time, then add the key lime juice, zest, and vanilla extract.
  • Gradually alternate adding the dry ingredient mixture and buttermilk to the butter mixture, starting and ending with the flour mixture. Mix just until combined to avoid overmixing.

Baking

  • Divide the batter evenly among the prepared pans. Bake for 22–25 minutes, or until a toothpick inserted comes out clean. Allow the cake layers to cool completely in the pans.

Frosting

  • Beat the softened cream cheese and butter together until smooth and fluffy. Gradually add the powdered sugar, mixing well. Blend in the key lime juice and vanilla extract until creamy.

Assembly

  • Place one layer of the cake on a serving stand. Spread a generous layer of frosting over the top, then repeat with the remaining layers. Frost the outside of the cake and sprinkle with lime zest.
