Instructions

Preparation

  • In a large bowl, combine the yogurt, lemon juice, cumin, garam masala, coriander, turmeric, and a pinch of salt. Add the chicken cubes, ensuring they are well-coated. Allow the chicken to marinate for at least 15 minutes to absorb the delicious flavors.

Cooking

  • In a large skillet, heat the butter and vegetable oil over medium heat. Once melted, add the finely chopped onion, minced garlic, and grated ginger. Sauté until the onions turn golden brown and fragrant, stirring occasionally.
  • Add the marinated chicken to the skillet and cook for about 5 minutes, stirring occasionally to ensure even cooking.
  • Pour the tomato puree into the skillet and bring the mixture to a gentle simmer. Cook for 10 minutes, stirring occasionally, until the chicken is fully cooked through.
  • Reduce the heat to low and gently stir in the heavy cream. Allow it to simmer for another 5 minutes, blending the flavors beautifully.
  • Adjust the salt to taste, stirring well to incorporate.
  • Remove from heat and garnish with fresh cilantro before serving. Enjoy warm alongside steamed rice or naan for a complete meal.

Notes

For deeper flavor, marinate the chicken overnight. Feel free to add more spices according to your taste; a pinch of red chili powder can introduce some heat. Using a cast-iron skillet helps retain heat and develop a richer flavor. Consider substituting half of the heavy cream with coconut milk for a delightful twist. Adding vegetables like bell peppers or peas during the cooking process can provide extra nutrition and texture.
