Ingredients

Instructions

Preparation

  • Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan.
  • In a medium bowl, combine chocolate graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the prepared pan.

Cheesecake Filling

  • In a large mixing bowl, beat softened cream cheese and 1 cup sugar until smooth. Add eggs one at a time, mixing well.
  • Mix in sour cream, heavy cream, melted chocolate chips, and vanilla extract until completely combined.
  • Pour the mixture over the crust and smooth the top. Bake for 55-65 minutes until set around the edges.
  • Turn off the oven and let the cheesecake cool inside for one hour. Refrigerate for at least four hours or overnight.

Strawberry Topping

  • In a medium saucepan, combine sliced strawberries, 1/4 cup sugar, lemon juice, and cornstarch. Heat over medium until thickened, about 5-7 minutes.
  • Allow to cool slightly, then spoon over the cooled cheesecake.

Notes

Ensure cream cheese is at room temperature for smooth blending. For a more intense chocolate flavor, add an extra 1/4 cup of chocolate chips. Chill overnight for best results.
