Ingredients

For the Whipped Feta

For the Crispy Brussels Chips

  • 250 g Brussels sprouts (outer leaves only) Crisp and fresh, become crunchy when roasted.
  • 1 tbsp olive oil Ensures even roasting.
  • Salt to taste Highlights the taste of the Brussels sprouts.
  • Optional: garlic powder or additional chili flakes Customize the spice level.

Instructions

Preparation

  • Trim the stems of the Brussels sprouts and peel off the outer leaves. Toss with olive oil, salt, and seasonings.

Roasting

  • Spread the seasoned Brussels leaves on a baking tray. Roast in a preheated oven at 180°C (355°F) for 10–12 minutes, shaking the tray halfway through.

Whipping the Feta

  • In a blender, combine feta, Greek yogurt, olive oil, lemon juice, lemon zest, and seasonings. Blend until smooth and airy. Chill until ready to serve.

Preparing the Hot Honey

  • Warm honey in a pan or microwave. Stir in chili flakes and smoked paprika, allowing to infuse for 5–10 minutes.

Serving

  • Spoon whipped feta into a bowl and drizzle with hot honey just before serving. Serve crispy Brussels leaves on the side for dipping.

Notes

For variations, use different herbs in the feta or incorporate nuts in the Brussels chips before roasting. Serve with crusty bread or pita chips for added options.
