Instructions

Preparation

  • Preheat your oven to 400°F (200°C) and brush both sides of the tortillas with vegetable oil.
  • Place the tortillas on a sheet pan and bake for 5-7 minutes until golden and crispy.
  • While the tortillas are baking, place a skillet over medium heat and add the ground beef.
  • Cook the beef until browned, then stir in the taco seasoning and water, simmer for 2 minutes.

Assembling

  • Spread a layer of refried beans on two tortillas, top with seasoned beef, and cover with a second tortilla.
  • Drizzle with enchilada or taco sauce and smother with shredded cheese.

Baking

  • Return the assembled pizzas to the oven and bake for 7-10 minutes until the cheese is melted and bubbly.

Finishing Touches

  • Remove from oven and sprinkle with diced tomatoes, jalapeños, and chopped green onions.
  • Cut into quarters and serve hot.
