Instructions

Preparation

  • Rinse cucumbers under cold water, trim ends, and cut them into your desired shape (spears, chips, or whole).

Making the Brine

  • In a medium saucepan, combine water, white vinegar, sugar, and pickling salt. Heat over medium until it boils, stirring until dissolved.

Adding Flavors

  • Remove from heat and stir in smashed garlic, mustard seeds, red pepper flakes, dill seeds, and black peppercorns. Let it rest.

Packing the Jars

  • Pack the cucumbers tightly into clean glass jars, distributing garlic and spices evenly.

Brining the Cucumbers

  • Pour the brine over packed cucumbers, ensuring they are submerged, leaving space at the top for expansion.

Cooling and Refrigerating

  • Seal jars tightly and let cool to room temperature. Transfer to the refrigerator and allow to sit for 3-5 days for best flavor.

Notes

Use fresh cucumbers, sterilize jars to enhance shelf life, and adjust spice levels as preferred. These pickles are great served with sandwiches or as a snack.
