Instructions

Preparation

  • Preheat your oven to 425°F (220°C) for perfect cooking temperatures.
  • In a bowl, mix together the chicken, olive oil, honey Dijon mustard, minced garlic, lemon zest, salt, and oregano. Cover and marinate for at least 1 hour or overnight.
  • Cut an onion in half and place it flat side down on a baking sheet lined with parchment paper. Insert two wooden skewers upright into each onion half.
  • Layer the marinated chicken thighs onto the skewers, ensuring they are packed well together.
  • Pour water or chicken stock into the base of the pan.

Cooking

  • Cover the chicken with foil and bake for 75–90 minutes until fully cooked and golden.
  • Allow the chicken to rest briefly, then slice thinly to serve.

Notes

For deeper flavor, marinate overnight. Add red pepper flakes for heat. Ensure even cooking with skewers of similar size.
