Instructions

Preparation

  • Start by throwing your shrimp into a large bowl. Coat them in olive oil, garlic powder, onion powder, salt, and black pepper. Mix well, ensuring the shrimp are entirely covered.
  • Cover the bowl and allow the shrimp to marinate in the refrigerator for anywhere from 30 minutes to 2 hours.

Cooking

  • Preheat your grill or grill pan to medium-high heat.
  • Once the grill is ready, place the shrimp on it, cooking for about 2–3 minutes per side until the shrimp turn pink and opaque. Keep a close eye to prevent overcooking.
  • While the shrimp cooks, grab a small bowl and whisk together mayonnaise, Sriracha, soy sauce, rice vinegar, and the additional garlic powder. Adjust the heat to taste by adding more Sriracha if desired.

Assembly

  • Divide your fluffy rice equally among bowls.
  • Lay the grilled shrimp on top and sprinkle with green onions and cilantro.
  • Drizzle a generous amount of Sriracha mayo over it all, creating an irresistible dish that’s ready to shine!

Notes

For intensified flavor, consider marinating the shrimp longer. Add texture with sliced avocado or cucumber, and feel free to experiment with ingredients such as grilled corn or pickled ginger as toppings.
