Instructions

Preparation

  • Preheat the grill to medium-high heat or the oven to 400°F (200°C).
  • Cut four large sheets of heavy-duty aluminum foil.
  • On each sheet, divide the chicken cubes evenly, followed by the pineapple chunks, bell pepper slices, and diced onion.
  • Drizzle olive oil over the ingredients in each packet, sprinkle with salt and pepper, and add about 2 tablespoons of BBQ sauce per packet. Gently toss to combine.
  • Carefully fold each foil sheet tightly around the mixture and crimp the edges to seal the packets.

Cooking

  • Place the packets on the grill and cook for about 15-18 minutes or bake in the oven for 20-22 minutes until the chicken reaches an internal temperature of 165°F (75°C).
