Instructions

Preparation

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, and sauté for 2-3 minutes until softened and fragrant.
  • Add 1 pound of ground beef to the skillet. Break it apart with a spatula and cook until browned, approximately 5-7 minutes. Drain any excess fat if necessary.
  • Stir in the diced sweet potatoes, smoked paprika, dried oregano, salt, and black pepper. Cover and cook for about 10 minutes, stirring occasionally, until the sweet potatoes are tender.
  • Add the diced zucchini and cook for another 5 minutes, ensuring it remains tender yet crisp.
  • Remove from heat, garnish with fresh parsley, and serve warm.

Notes

To brighten flavors, consider adding lemon juice before serving. For spice, add red pepper flakes. Experiment with additional vegetables for variation.
