Instructions

Prepare the Dressing

  • In a bowl, whisk together the Greek yogurt, olive oil, lime juice, minced garlic, oregano, salt, and pepper. Mix in the fresh cilantro or parsley and set aside.

Assemble the Salad

  • Begin by arranging the romaine or mixed greens at the bottom of a bowl. On top, layer the sliced grilled chicken, creamy avocado, halved cherry tomatoes, sliced cucumber, and sweet corn. If you love the rich texture of guacamole, drizzle a dollop on top.

Drizzle & Serve
