Instructions

Preparation

  • Preheat the oven to 425°F and line a baking tray with parchment paper.
  • Boil the potatoes in salted water for about 8 minutes, until fork-tender.
  • Drain and let the potatoes cool for a few minutes.
  • Dry the cooled potatoes with a towel, then place them on the prepared baking tray.
  • Smash each potato gently with the bottom of a glass or potato masher.
  • Brush the smashed potatoes with olive oil and season with salt and pepper.

Cooking

  • Roast the potatoes in the oven for 45–60 minutes, flipping halfway through until golden brown.
  • Prepare the creamy herb sauce by mixing Greek yogurt, mayo, Dijon mustard, lemon juice, garlic, parsley, dill pickle, and shallot in a bowl.
  • Once the potatoes are ready, remove them from the oven and let them cool for 5 minutes.
  • Toss the potatoes gently in the creamy sauce until coated.
  • Garnish with chopped scallions and crispy bits from the potatoes.
  • Serve warm.

Notes

For extra crispiness, broil the potatoes for an additional 2-3 minutes. Feel free to use different fresh herbs for the sauce.
