Ingredients

For the Toast

  • 4 slices rustic bread (sourdough, ciabatta, or French bread) Choose bread with a good crust to enhance the toast's crunch.
  • 2 tbsp butter (softened) This will create a deliciously rich base for spreading.
  • 2 cloves garlic (minced) Fresh garlic fills the toast with flavor.

For the Topping

  • 1 cup mushrooms (button, cremini, or wild, sliced) Use your favorite mushrooms for varying textures and flavors.
  • 1 tbsp olive oil This adds a fruity note as you sauté the mushrooms.
  • 1 tbsp butter Extra butter elevates the richness during cooking.
  • 1/2 tsp dried thyme (or fresh) This herb complements the earthiness of the mushrooms.
  • 1/2 tsp balsamic vinegar (optional) This optional addition can elevate the dish with a sweet acidity.
  • 1/2 cup shredded mozzarella Melty mozzarella creates a gooey texture.
  • 1/2 cup shredded Gruyère or Parmesan These cheeses add depth and a slight nuttiness.
  • Fresh parsley for garnish A sprinkle of parsley adds a pop of color.

Instructions

Preparation

  • Preheat your oven to 375°F (190°C). Mix the softened butter with minced garlic until well-blended. Generously spread this mixture over the slices of rustic bread.

Toasting the Bread

  • Place the slices of buttered bread on a baking sheet and toast in the oven for about 5 minutes until they are light golden and crispy.

Cooking the Mushrooms

  • In a pan set over medium heat, combine the remaining butter and olive oil. Once hot, add the sliced mushrooms, dried thyme, and a pinch of salt and pepper. Cook for 5 minutes or until the mushrooms are tender and lightly browned. If using, stir in the balsamic vinegar.

Assembling the Toasts

  • Remove the toasted bread from the oven and top each slice with a generous helping of the sautéed mushrooms. Sprinkle a portion of mozzarella and Gruyère (or Parmesan) cheese over the mushrooms.

Final Baking

  • Return the topped toasts to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and slightly golden. Garnish with fresh parsley and serve warm.

Notes

For an extra layer of flavor, consider adding finely chopped fresh herbs like chives or basil before serving. For a kick, sprinkle crushed red pepper flakes over the cheese before baking. If you’re in a hurry, a toaster oven can be used for toasting the bread and melting the cheese.
