Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Prepare a 10x15-inch jelly roll pan by greasing and lining with parchment paper.
  • In a small bowl, whisk together flour, cocoa powder, baking powder, and salt.
  • In a large bowl, beat the eggs and granulated sugar until thick and pale yellow, about 5 minutes.
  • Stir in the vanilla extract until incorporated.
  • Gradually fold in the flour mixture until just combined.

Baking

  • Spread the batter evenly in the prepared pan and bake for 12-15 minutes.
  • While the cake bakes, lay a clean kitchen towel flat and dust it with powdered sugar.
  • Once baked, invert the cake onto the prepared towel and peel off the parchment paper.

Rolling

  • Roll the cake and towel together from the short end and place seam-side down to cool.
  • Unroll the cake gently and remove the towel.
  • Spread caramel sauce over the cake and sprinkle nuts on top.
  • Re-roll the cake without the towel, seam-side down.

Ganache Preparation

  • Heat heavy cream in a saucepan until simmering, then pour over chocolate chips. Let sit for 1-2 minutes and stir until smooth.
  • Drizzle ganache over the rolled cake and refrigerate for at least 1 hour to set.

Serving

  • Garnish with additional caramel sauce, nuts, and chocolate just before serving.

Notes
