Ingredients

Instructions

Preparation of the crust

  • Preheat oven to 170°C (340°F) and line a loaf pan with parchment paper.
  • In a bowl, combine finely ground pistachios, breadcrumbs, melted butter, and a pinch of salt. Press firmly into the loaf pan.
  • Bake for 8-10 minutes until golden, then let it cool slightly.

Making the sweet potato layer

  • Blend roasted sweet potato puree with egg, cream, seasoning, and Parmesan until smooth.
  • Pour the mixture over the cooled crust and smooth it out.
  • Bake for 20-25 minutes until just set, then chill until firm.

Making the whipped feta

  • Blend crumbled feta cheese, cream cheese, olive oil, lemon zest, and black pepper until fluffy.
  • Spread the whipped feta gently over the cooled sweet potato layer, and chill for at least 2 hours or overnight.

Serving

  • Carefully unmold the terrine and slice with a hot knife for clean edges.
  • Garnish with chopped pistachios, fresh herbs, and optional lemon zest or chili oil.
