Instructions

Preparation

  • Preheat your oven to 200°C (400°F).
  • In a mixing bowl, toss the chopped carrots with olive oil, salt, and pepper.
  • Spread the carrots on a baking sheet for even roasting.

Cooking

  • Roast the carrots in the oven for 25-30 minutes until tender and slightly caramelized.
  • Allow the carrots to cool slightly, then add them to a blender with grated ginger and lemon juice.
  • Blend until smooth and creamy.

Serving

  • Serve the warm dip in a bowl with fresh vegetable sticks on the side.

Notes

For an added layer of flavor, sprinkle some smoked paprika or cumin over the carrots before roasting. Adjust ginger to your taste. This dip is perfect for meal prep and can be stored in an airtight container for up to three days in the refrigerator.
