Ingredients

For the Cookie Dough

  • 1 small golden beet, finely grated adds sweetness and color

  • 1/2 cup powdered sugar for sweetness

  • 1/3 cup dried cranberries, finely chopped for tartness
  • 1 tbsp coarse sugar (for sprinkling, optional) adds crunch

Instructions

Preparation

  • Melt the unsalted butter in a small pan over medium heat. Add grated golden beet and drizzle in honey. Cook for about 3-5 minutes until caramelized. Remove from heat and let cool.
  • In a mixing bowl, combine softened unsalted butter and powdered sugar. Beat until creamy. Add vanilla extract and salt, then mix.
  • Gradually add all-purpose flour, stirring gently until the dough is cohesive. Fold in chopped dried cranberries and cooled caramelized beets.

Shaping & Chilling

  • Transfer the cookie dough onto plastic wrap. Shape into a log about 2 inches thick and wrap tightly. Chill in the refrigerator for at least 1 hour.

Baking

  • Preheat the oven to 350°F (175°C). Slice the chilled log into 1/4-inch rounds. Place on a parchment-lined baking sheet and sprinkle with coarse sugar if desired.
  • Bake for 12-15 minutes until the edges are lightly golden. Remove from oven and allow to cool completely.

Garnishing

  • Drizzle melted white chocolate over cooled cookies for a finishing touch.

Notes

Use fresh golden beets for best results. Don't skip the chilling step to enhance flavor and texture. Experiment with the ratio of cranberries based on preference.
